A creamy ranch dressing with none of the usual dairy fats, sugars, or additives. Use generously over fresh green salads or as a dipping sauce with raw vegetables.
Ingredients:
1 cup raw cashews + water to soak overnight
1/4 cup olive oil
1/2 cup unsweetened almond milk, or more as needed (unsweetened is important for this recipe)
3 tablespoons lemon juice
1/2 teaspoon onion powder
1 teaspoon dried dill
dash of paprika (we used a smoked flavour)
2 tablespoons fresh garlic chives and parsley, minced (regular chives will do in a pinch)
salt and fresh black pepper, to taste
Directions
Soak cashews for between 4-12 hours in water (this will create the creamy texture essential to this recipe)
Drain water from cashews and Cleanblend nuts until smooth with oil, almond milk, lemon juice, onion powder, dill, and paprika, garlic chives.
If the mixture requires thinning add soy or almond milk of your choice 1 teaspoon a a time.
