INGREDIENTS FOR OVERNIGHT OATS SMOOTHIE:

  • 1/2 mashed banana
  • 1/2 cup oats
  • 1/4 cup coconut milk
  • 1 tablespoon chia seeds
  • 1 tablespoon flaxseeds

INGREDIENTS FOR CASHEW CREAM:

  • 2 tablespoons cashew nuts
  • 1⁄4 cup coconut milk (use less for a thicker cream)
  • 1 pitted medjool date
  • 1 teaspoon vanilla

DIRECTIONS FOR OVERNIGHT OATS:

  • Mix all ingredients together in a bowl with mashed banana
  • Add 1⁄4 cup coconut or almond milk and soak overnight
  • In the morning add to blender and blend to a smooth consistency For Blueberry Cashew Cream
  • Make this topping ahead of time
  • Add ingredients to blend and blend until smooth
  • Add additional liquid by the teaspoon if the mixture is too thick ● Use the tamper to help blend
  • Refrigerate

  • Add blended overnight oats to a serving bowl
  • Top with blueberry cashew creams
  • Garnish with coconut, dried blueberries
